Buffalo sauce recipe


I fell in love with this sauce during my 6 months in the USA (back in the uni days), having it on almost everything. unfortunately, I came back a little chubby and in retrospect, as a nutritionist, I’m quite sure an overindulgence in the sauce was partly to blame.

To sidestep this problem, I got together with our genius chef Mark, and through much trial and error, we made a ketogenic, almost zero calorie, low sodium and completely natural adaption of this tangy condiment. We do use it for our meal prep delivery service but it’s too good to keep to ourselves so we wanted to share it with our readers.

1. In a saucepan cut up and put in the following:

  • 2 large chillis (red)
  • red wine vinegar 300ml
  • water 100ml
  • 1 bunch of fresh coriander
  • 2 bell peppers (1 red, 1 yellow) - no need to de-seed
  • 1 tsp of pink salt

2. Boil the ingredients for around 15 minutes.

3. Blend the ingredients - we recommend using a hand blender and to careful when blending hot liquids.

4. Sieve the liquid to get rid of any seeds and extra bits - really push the residue to get all the liquid out (Hint - keep the leftover residue as it makes a great base for marinades or sauces you might wish to use at another time).

5. Buffalo sauce is meant to be runny, but if it is too runny, simply place the final sauce back on the heat to reduce it (evaporate the water some more).

6. Wait until the sauce is cool before you bottle it (we recommend using recycled jam jars).

Please note that this sauce should be kept in the fridge or it won’t last very long. We hope you enjoy.
